Clean the ripe melon from the skin and seeds, cut the pulp with pieces of medium size.

Boil water, lower the pieces of melon into it and boil for 5-10 minutes over medium heat. Then throw it in a colander. Leave the water in which the melon was cooked, we will cook the syrup from it.

Boil the syrup: in the water in which the melon was blanched, enter sugar at the rate of 1: 1. Add cinnamon or vanilla sugar if desired. Boil the syrup, stirring, over low heat until sugar is completely dissolved.

Add pieces of melon and boil jam over low heat for 10 minutes. Within 3 days, repeat cooking with a break of 10-12 hours. If necessary, pour the syrup. Add a pinch of citric acid to the finished jam and boil for another 1-2 minutes.

Pour the finished melon jam hot into pre -sterilized banks, roll up, cool in the position upside down and then send for storage to a cool dark place.
