Pickled waves are a delicious winter appetizer. In order for canned mushrooms to be safe for health, it is very important to strictly observe the cooking technology. Choose only fresh young waves for conservation, without flaws and worms.

A step -by -step recipe for cooking

Sort the mushrooms, cut the legs, moving away from the hat 0.5 cm, clean the rest of the skin and cut it off. Pre -soak the waves in cold water to leave bitterness. This may take from 1 to 3 days, while water must be changed at least 4 times a day.

Rinse the soaked waves well, place it in a pan, pour water, salt and cook over low heat until cooked (about 20-25 minutes). Ready mushrooms should go down to the bottom of the pan. Do not forget to remove the foam. When the waves are completely cooked, drain the water and rinse the mushrooms under running water.

Prepare the marinade. To do this, boil water, add salt, sugar, bay leaf and spice, boil for 2-3 minutes, then enter vinegar.

Lower the mushrooms to the marinade, bring to a boil and boil over low heat for 5 minutes.

Lay the mushrooms in pre -sterilized banks, pour the remaining hot marinade, roll it over.

At the bottom of the large pan, put a heel, put cans with canned waves, pour water on the shoulders of the cans into the pan, bring to a boil and sterilize over medium heat for 30 minutes (0.5 l can) or 45 minutes (banks 1 l). As necessary, add water to the pan.

After the indicated sterilization time, pull out cans with mushrooms from the pan, turn upside down, wrap it with a blanket and leave until completely cooled. Keep canned mushrooms for no more than 1 year in a dry cool place.
