Keep the oven door ajar so that condensate comes out - the plums must be dried, not bake. If after the indicated time the plums remained soft, continue the drying process.

When the plums and garlic become dry enough, cool them slightly and put them tightly in sterile jars.

Pour olive oil into the stewpan and bring to a boil over low heat (do not boil!).
